Take Lights Out, our imperial stout with coffee. This beer embraces a dry, deeply roasted profile, leaning more into the dark chocolate and slight bitterness rather than the sweetness often found in barrel-aged beers.

For this release, we partnered with Bodhi Leaf Coffee Roasters and used their Old Town Blend, a carefully selected coffee that enhances the stout’s richness without overpowering it. The coffee was introduced on the cold side of brewing using a course-ground infusion method in the brite tank, a process that prevents excess astringency and allows us to monitor extraction daily until the ideal flavor is achieved.

The result? A crisp, coffee-forward craft beer that pairs beautifully with savory breakfasts like smoked or maple bacon, eggs, and toast—or, for those seeking something heartier, smoked brisket with charred asparagus.

For this beer, we selected Brot Coffee’s "Bread and Butter" blend, a dark-roasted espresso-style coffee that adds depth without overwhelming bitterness. Unlike Lights Out, which used ground coffee, this beer was dosed with whole beans to extract its character more slowly, ensuring a well-integrated coffee presence without excessive roastiness.
